I always find it hard to be inspired to eat in the morning from the lack of food usually in the cupboards and the lack of time I have.  However, recently I’ve tried to eat more varied breakfasts from smoothies to muesli, but my favourite has got to be breakfast muffins.  This isn’t the healthiest muffin recipe out there but it doesn’t contain much sugar so it still kinda counts if you want something delicious and convenient in the mornings or weekend.

*Ingredients*

4oz of plain flour

4oz butter

2 eggs

2 1/2 oz of caster sugar

1 1/2 tsp of baking powder

Handful of washed blueberries

Method

Cream together the butter and flour until combined then gradually add each of the eggs whilst beating the mixture.

Combine all the dry ingredients into the mixture and mix thoroughly before adding the blueberries.

Spoon the mixture into muffin cases * I had fairy cake cases hence the pic above* and place into the oven at 200 degrees for approx. 15-20 mins

Super easy to make and taste yummy.  If you were wanting to be super healthy you could use whole-wheat flour
