Hi Everyone! Happy Easter Weekend! This afternoon I managed to make some time amidst studying hell to bake some Easter nest Cupcakes. I was inspired by the YouTube video that Zoella and Mark Ferris did a few weeks ago in which they baked these chocolate Easter Cupcakes. They looked so delicious that I decided to give it a go myself. If you fancy watching the video its linked here
*Recipe*
4oz of self raising flour
4oz of caster sugar
4oz of butter
2 eggs
1/2 tsp of baking powder
4 tbsp. of cocoa powder
Shreddies
12 small paper cases
12 large paper cases
Chocolate frosting and mini eggs to decorate
The recipe that I followed was Mary Berry’s for her classic cupcake recipe.
Step 1) Mix the 4 tbsp. of cocoa powder with 4 tbsp. of warm water
Step 2) In a large separate bowl, mix together all the cake ingredients together until it forms a smooth glossy batter.
Step 3) Preheat the oven to 200 degrees and line cupcake cases and fill the cases with the batter.
Step 4) Whilst the cakes are baking in the oven for the next 15-20 minutes, melt a bowl of chocolate over hot water. Crush a packet of shreddies or cornflakes before adding them into the bowl of melted chocolate.
Step 5) Fill small cases with the melted shreddies and add a mini egg. These will set in the fridge and form to be mini nests.
Step 6) Once the cakes are out of the oven and have cooled, begin to ice the cakes with the chocolate frosting.
Step 7) Take the mini Easter nests out of the fridge and place them on top of the icing.
Step 8) You now have Easter nests!
