Hi Everyone! So to celebrate the beginning of Autumn * and the return of the Great British Bake off* I did some baking- Maple Pecan Muffins. I got this recipe from the Irish Chef Rachel Allen’s book, Rachel’s Favourite Food at Home. What I love about this recipe is not only how delicious the muffins are but how easy the recipe is to follow and the little amount of preparation time that is needed.
Muffin Recipe
1 egg
2oz of oats
75 ml of milk
3oz soft butter
3oz of light brown sugar
8oz of plain flour
3 tsp baking powder
1/2 tsp salt
3oz chopped pecans
For the Glaze (optional)
2oz softened butter
2oz sifted icing sugar
1 tbsp of maple syrup
12 pecans
Method
1) In a large bowl whisk the egg, oats, maple syrup and milk and set aside to allow the oats to soak in the mixture.
2) In another large bowl beat the butter and sugar together to make a soft paste. Gradually add the milk mixture, stirring all the time, and then stir in the sifted flour, baking powder, salt and roughly chopped pecans until just combined.
3) Spoon the mixture into 12 paper cases in a muffin tin and bake in the oven at 200 degrees or Gas Mark 6 for 18-25 mins. I would advise checking the muffins every couple of mins after the timer hits 18 mins so that they do not burn
4) For the glaze, cream together the butter, sugar and syrup. Using a knife, spread the glaze over the tops of the cooled muffins and decorate with a pecan on top.
